Blueberry and Coconut Ricotta Bowl

Blueberry and Coconut Ricotta Rice Bowl

This is a quick, easy and delicious breakfast recipe! The best part is that it's like having cheesecake for your first meal of the day!


Substitutions and Notes:


If you don't have coconut milk, you can substitute with coconut water. Or use regular milk a bit of coconut flavor extract. We also use prepackaged, toasted coconut flakes. If you use the lightly sweetened variety there's no need to add honey.


 

Ingredients: 1/4 cup whole milk ricotta cheese 1 tablespoon coconut milk 1 tablespoon honey or to taste 1 tablespoon slivered almonds 1 tablespoon sweetened flaked coconut 1/2 cup blueberries, or to taste


Honey: Chestnut, Eucalyptus and Lavender are especially good with ricotta
