We love turkey salad sandwiches. This is an easy and tasty one we make every year, using the leftovers from our roasted turkey. It's also featured in our One Turkey, Two People blog, where we roasted a 9.5 kg (21 lb) turkey to see how many meals we could make out of it for the two of us. This is also good use of leftover roasted chicken!
Ingredients
Makes Two Sandwiches.
4 slices of white bread
185 g of shredded leftover turkey meat 2 green onions, chopped 1 small celery stick, finely sliced 2 - 3 Tbsp fresh basil thinly sliced
*3 - 4 Tbsp Mango Ginger Aioli (we buy ours at the Co-Op grocery store) Butter lettuce
Method
Mix turkey, green onions celery, and basil. Once well combined, stir in mango. Toast and butter bread. Place on bread with lettuce leaves, and enjoy!
Notes
* Don't have mango ginger aioli in your store? Try this recipe:
2 cups mango diced mango
1 cup mayonnaise
1-2 tablespoons grated ginger
Kosher salt to taste Blend mango into a puree. Gradually stir into mayonnaise until you achieved a desired consistency (don't let it get too "watered down"). Taste as you go, and stop just when the mango flavour starts to come through. Add one tablespoon of ginger, give it a taste to see if you want more. The ginger should be a delicate flavour, not overpowering.
