Mediterranea Fried Quinoa

The side dish is one of our favourites. It has delicious clean flavours, is easy to prepare, and has lots of vegetables.  It makes for an healthy side dish to any Mediterranean or Middle Eastern mains and can be a lovely main for vegetarians.


Ingredients


Chicken Broth (or vegetable broth) Red Quinoa Eggplant Onion Garlic Grape Tomatoes Baby Spinach Kalamata Loive Oregano Feta Cheese

 


 

Moroccan Lamb Sausage, Mediterranean Quinoa, Baked Zucchini


Drink Pairing

Wine: full-budied red, tannic wine, Albarino, Barbera, Chianti,  Pinot Noir, Syrah, Zinfandel

Tea: Strong black tea -  for a Middle Eastern touch add a couple of cardamom pods and/or a sprinkle of rose petals; for a Mediterranean flare add a little lavender. Sideritis tea, which is also sold as Greek Mountain Tea or Shepherd's Tea.  Linden. Saffron tea - a pink of saffron, a few cardamom pods and some rose petals.
