Packed Lunch: Turkey Meatballs & Khorasan Salad

This lunch took a little experimenting to get just right, but now it is a staple in our house. Flavours lean towards the sweet end with the meatball sauce and the fruits in the khorasan salad. But the meatballs also provide a spicy kick, and the salad a refreshing tartness with the pomegranate seeds. We also liked the way cumber refreshes our palate as we eat.

Packed Work Lunch, Turkey Meatballs and Kamut Salad


Notes:


Healthy: This lunch is intentionally a healthy option that also manages to be very tasty. It includes a whole grain, which doesn't spike your blood sugar and will keeps us feeling full. The meatballs are made using a lean ground turkey-breast, which is lower in calories, but also protein rich. Grapes and cucumbers have lots of healthy fiber while also being hydrating. This lunch has it all: fruits, grains, vegetables and meat!

 

Items:

4 turkey meatballs. If you want to control your calories, don't layer on the sauce, just give them a quick toss in the sauce and put them in your container.

• 1 cup khorasan salad

• 1 cup grapes

• 125 g cucumber slices


Calories: We use this lunch as a way to control how many calories we eat up in a day. If you pack this lunch as we describe, it will be about 500 calories.
