We have three giant rhubarb plants in our garden, so rhubarb recipes become a summer priority. We switch out the red onion for Vidalia onion.
Ways to enjoy it: • for breakfast: on toast with ricotta cheese • as an appetizer: with grilled baguette, ricotta cheese, and a little green onion
• on slices of smoked duck breast as part of an appetizer • delicious on a cheeseboard - pair it blue cheese or Stilton, and enjoy a glass of port with it • grilled cheese sandwich: Use blue cheese and fontina, with a layer of this jam. Bonus points if you make it with walnut bread!
