Shrimp Scampi Spinach Salad

We love how easy and fast this recipe is! This is excellent for a weeknight meal, tasty enough to serve to guests, and light enough for a hot day.

 

Make It Potluck or Pre-Made Lunch Friendly: To make it a potluck friendly meal, cut the butter and half and add 1 tablespoon of olive oil. This will keep the butter from congealing when it cools to room temperature.


No Waste Kitchen: If you bought shell-on shrimp, you can triple the butter and sauté the shrimp shells until they are red, and remove them. The butter will take on a delicious shrimpy flavour. The shells will absorb some butter which is why we recommend tripling the amount added to the pan.

Butter Uncooked Shrimp Garlic Parsley Spinach Cherry Tomatoes Lemon Almonds Salt Pepper Optional: Parmesan


 

Pairings: Beer (especially pilsner) Champagne cocktails Wine: Sauvignon Blanc (especially New Zealand), Chablis, White Burgundy, Chardonnay (especially California), Riesling, Sparkling Wine
